Jollof rice will always be bae, but it is always nice to learn something new. You may surprise yourself when you discover you actually prefer this to your beloved jollof.
Peanut butter rice is a very traditional Zimbabwean rice dish usually served with a beef or chicken stew and fried greens. It’s even tastier when cooked on a open fire – this gives it a smoky flavour which we all know elevates a dish to another level. Another option would be to use a smoky peanut butter made from fire roasted peanuts which. This rice dish serves about 3-4 people.
2 Cups basmati rice
6 Cups water
4-6 Tablespoons Smooth Peanut Butter (I love peanut butter so I always out more)Salt to taste
Salt to taste
- In a deep medium sized pot, add rice, salt and water.
- Place on the hob, bring to the boil and the lower the heat and leave to cook for about 20 minutes.
- Whilst still cooking, add peanut butter and stir it in combining using a wooden spoon. This combining action is the same as you would for pounded yam or any other starch dish. If the rice is too dry, add a little water and continue to combine until the peanut butter is well combined with the rice. Also ensure you taste for salt at this stage and add more if necessary.
- Leave rice on lowest heat for 10-15 minutes, then serve alone or with any stew of your choice with some fried greens
